While the temperature outside has dipped back to what we’d expect in March, there are a few sure signs of spring in the restaurant today…
Fresh Alaskan halibut showed up! The thing I love about any “first of the season” product is that you really know how fresh it is. The season JUST opened, so this fish was literally in the water just two days ago. It’s firm, it’s glistening, it’s beautiful and oh, so sweet.
Our method is to poach the delicate filets, ever so gently in broth of butter, thyme and sweet onions. We then take the fish and pair it with other sure signs of spring – fresh favas, baby morel mushrooms and sweet little tips from the pea vines.
Right from the ocean…onto your plate!
