Bulbs light up Spring Dining!

Alongside the morel mushrooms, another sign of spring at Pearl is the arrival of Walla Walla spring onions. Sometimes called salad onions, these delectable little babies have that same sweet flavor of Walla Walla onions with a nice long tail. We like to slice them up and sauté with a few other new vegetables – asparagus, peas and baby carrots.

Another treat in the house this month are the green garlic bulbs; these are the small bulbs that are harvested while “thinning” the fields. Its bulb is nice and soft with a pungent garlic flavor.

And also showing up this week are the “garlic spears”. These are the sprouting shoots of the elephant garlic plant. These magical looking spears have a wonderful mild garlic and nutty flavor with an asparagus-like texture. Great on the grill, brushed with a little olive oil, salt and pepper.

Alaskan Halibut Filet

With salt-roasted Yukon gold potatoes, bacon, spring onions and green garlic pesto, garnished with grilled garlic spears.
